The chayote, also known as air potato, is a vegetable that comes from the chayotera. It is a climbing plant of the cucurbitaceae family and can reach up to 10 meters in length. The chayote is pear-shaped and weighs between 200 grams and 2 kilos.
The skin of the chayote has wrinkles and its color ranges from light green to pale yellow.Its fleshy pulp is white with a seed in the center. It has a light flavor and is attributed with multiple nutritional properties.
